Healthy Dinner Recipe: Fiesta Chicken Enchiladas

Ok, so a friend sent me this recipe a couple of days ago and I am in LOVE with this delicious, healthy recipe.  I made this last night and saying that it taste AMAZING is a serious understatement.  It did not taste like some bland, no taste, healthy recipe.  It has vegetables, seasoning, and so much FLAVOR.  I know you will enjoy this recipe as much as my family and I did last night.  


Recipe: Fiesta Chicken Enchiladas Made Over (Courtesy of Kraft.com)
Ingredients:
1 lb. boneless skinless chicken breasts cut into bite size parents (we used chicken tenderloins)
1 large green pepper chopped
1 large red pepper chopped
1tbsp of chili powder (I used the Pampered Chef chili powder)
3/4 cup of Taco Bell Home Original Thick and Crunchy Salsa (divided)
2 oz of Philadelphia Neufchatel Cheese, cubed
3/4 cup of Mexican style 2% Milk Finely Shredded Four Cheese (divided)
8 whole wheat tortillas (I thought they would be nasty, but they taste just like the regular tortillas)


Directions:
1. HEAT oven to 375ºF.
2. HEAT large skillet sprayed with cooking spray on medium heat. Add chicken, peppers and chili powder; cook and stir 8 min. or until chicken is done. Stir in 1/4 cup salsa and Neufchatel; cook and stir 3 to 5 min. or until Neufchatel is melted and mixture is well blended. Stir in 1/4 cup shredded cheese.
3. SPOON heaping 1/3 cup mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining salsa and shredded cheese. Cover.
4.  20 min. or until heated through.
