Mid-Week Healthy Lunch Recipe: Club Turkey Wraps

I love eating wraps.  They don't take long to make at all and people usually have the ingredients in their refrigerator.  It's great to take for your lunch or send it to school with your children.  You can make it the day of school/work or the night before.  Enjoy!

Recipe: Club Turkey Wraps

Ingredients:

  • 4-5 slices of reduced sodium bacon cut in half
  • 1/2 cup of fat free mayonnaise 
  • 1/2 cup of salsa
  • 4 fat free tortillas, heated (You can use any flavored tortillas as long as they are fat free.  We like the jalapeno and spinach flavored tortillas best)
  • Some large leaves of romaine lettuce or iceberg lettuce (usually about 4-5 pieces)
  • Turkey (Instead of chopping our turkey, we use deli meat that is sliced thinly and just layer it in the wrap.  Our favorite is the oven roasted turkey)
Directions:
1. In a large nonstick skillet, cook your bacon (crispy).  Drain all the excess grease off the bacon using a paper towel.  
2. In a small bowl, mix salsa and mayonnaise together.
3. Heat your tortillas (you can do so in the oven or in a nonstick skillet.  Then top each tortillas with a piece of lettuce, turkey, mayo/salsa mixture, and bacon.

***To fold your tortilla: fold both sides of each tortilla towards the center, overlapping just a tad.  Then cut the wrap in half.  

I serve this meal with fruit!
