On The Seventh Day of Cooking/Baking

On the seventh day of cooking and baking, our featured recipes are an appetizer: chocolate chip ball and some miniature tarts that you and your guest/family will love. Happy Cooking/Baking!


Cooking Recipe: Chocolate Chip Cheese Ball (Courtesy of Taste of Home Website)



Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup butter, softened
  • 1/4 teaspoon Spice Islands® pure vanilla extract
  • 3/4 cup confectioners' sugar
  • 2 tablespoons brown sugar
  • 3/4 cup miniature semisweet chocolate chips
  • 3/4 cup finely chopped pecans
  • Graham crackers

Directions

  • In a large bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours.
  • Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Refrigerate for at least 1 hour.
  • Just before serving, roll cheese ball in pecans. Serve with graham crackers. 

Baking Recipe: Pecan Goody Cups (Courtesy of Taste of Home Website)

Ingredients

  • 3/4 cup butter, softened
  • 2 packages (3 ounces each) cream cheese, softened
  • 2 cups all-purpose flour

  • FILLING:
  • 1-1/2 cups packed brown sugar
  • 2 eggs
  • 1 tablespoon butter, melted
  • 48 pecan halves

Directions

  • In a large bowl, beat butter and cream cheese until light and fluffy. Gradually add flour, beating until mixture forms a ball. Cover and refrigerate for 15 minutes. For filling, in a small bowl, combine the brown sugar, eggs and butter.
  • Roll dough into 1-in. balls. Press onto the bottoms and up the sides of greased miniature muffin cups. Spoon filling into cups; top each with a pecan half.
  • Bake at 350° for 20-25 minutes or until golden brown. Cool for 2-3 minutes before removing from pans to wire racks.
