On the Sixth Day of Cooking/Baking

Can you believe Christmas is in 7 days?  I hope you have found some good recipes so far for you, your guest, and/or your family.  The Cooking Recipe is a hearty appetizer: Creamy Black Bean Salsa.  It looks delicious/festive and it tastes AMAZING!!!  The "baking" recipe is a cold, minty treat: Peppermint Ice Cream Dessert.  A friend of mine in Kansas use to make this delightful treat during the summer!  Happy cooking/baking everyone :)


Cooking Recipe (Courtesy of Taste of Home Website): Creamy Black Bean Salsa

Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1-1/2 cups frozen corn, thawed
  • 1 cup finely chopped sweet red pepper
  • 3/4 cup finely chopped green pepper
  • 1/2 cup finely chopped red onion
  • 1 tablespoon minced fresh parsley
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • Tortilla chips

Directions

  • In a large bowl, combine the beans, corn, peppers, onion and parsley. Combine the sour cream, mayonnaise, vinegar and seasonings; pour over corn mixture and toss gently to coat. Serve with tortilla chips. Refrigerate leftovers.


Baking Recipe: Peppermint Ice Cream Treat
Ingredients:
4 Oreo cookies, broken
1qt peppermint stick or mint chocolate chip ice cream
1/2 cup of whip cream
1tbsp of confectioners' sugar
2tsp of baking cocoa
Candy canes for garnish

Directions:
Sprinkle the broken oreo's into four dessert dishes. Place 1-2 scoops of the ice cream on top of the cookies.  In a mixing bowl, beat the cream, sugar, and cocoa until soft peaks form.  Place a scoop (dollop amount) over the ice cream.  For garnish, add a candy cane and if you have any additional oreo cookies, you can place that in the dish as well.
